Salsa callejera

A cooked salsa with tomatoes and tomatillos. This recipe is very similar to El Azteca.

NOTE: Roast the veggies next time.
 
ingredients: Cooked ingredients
3 roma tomatoes
2 tomatillos
1 jalapeno
1 garlic clove, do not peel

Toasted ingredient
1 dried arbol chili

Uncooked ingredients
1 Tbsp onion, coarsely chopped
1/2 cup cilantro, coarsely chopped
1/8 tsp ground cumin
3/4 tsp kosher salt
 
instructions: 1) Place the tomatoes, tomatillos, jalapeno, and garlic in a sauce pan, cover with water and bring to boil.

2) Once the water hits a boil, reduce to a simmer and cook for 10 minutes.

3) While the veggies are cooking, toast the arbol chili in a pan and turn every 10-20 seconds for a total of a minute.

4) Remove the stem and seeds from the arbol chili.

5) When the veggies are done, remove and let it cool for a few minutes.

6) Cut out the stem and core of the veggies. Also remove half the seeds from the jalapeno as it's too spicy for our taste.

7) Place everything in a blender and pulse till smooth.

8) Pour the salsa into the sauce pan and reduce till thickened.
