Salsa roja
description:
A basic salsa recipe which adds some roasted freshness to a taco. This salsa tastes similar to the roasted salsa from Rubios.
 
ingredients: 4 plum tomatoes
2 garlic cloves, outside skin on
1 jalapeno
1/2 onion, quartered
3 Tbsp fresh cilantro
3/4 tsp table salt
1/2 lime, juniced
 
instructions: 1) Place tomatoes, jalapeno, garlic, onion in a pan and broil till blackened.

2) Let the vegetables cool.

3) Once cooled, cut off the stem from the jalapeno and remove some seeds. Remove the core from the tomatoes. Remove the skins from the garlic. Cut off the root end of the onion.

4) Place tomatoes, jalapeno, garlic, onion, cliantro, and salt in a blender and pulse till chopped.

5) Add oil to a hot pot over medium heat.

6) Dump contents to the hot pan and simmer till thickened.

7) Remove from heat and cool. Add lime juice to brighten up the salsa.
