Salsa verde (boiled)

Simple recipe that provides a bright, fresh flavor. Goes well with New Mexican Pork.
 
ingredients: 1 lb tomatillos, husked and rinsed
1/4 cup chopped onion
1 jalapeno
1 garlic clove
1/2 cup cilantro leaves
1/2 tsp kosher salt
 
instructions: 1) Place the tomatillos, garlic, and jalapeno in a pot and cover with water.

2) Place over high heat until it comes to a boil. Simmer at medium for 10 minutes or until tomatillos change in color from a bright to a plae green.

3) Remove the tomatillos, garlic, and jalapeno. Save off 1/4 cup of the cooking liquid.

4) Remove the stem and seeds from the jalapeno.

5) Add tomatillos, garlic, jalapeno, 1/4 cup of the cooking liquid, cilantro, onion, and salt to a blender. Add more salt if needed.
