| ingredients: | 4 chicken breasts (boneless, skinless) 4 quarts water 1/4 cup table salt 2 Tbsp sugar 6 garlic cloves, peeled and smashed |
| instructions: | 1) Whisk water, salt, sugar, and garlic in the dutch oven until salt and sugar are dissolved. 2) Cover chicken breasts with plastic wrap and pound to 3/4-inch thick (or cut in half). Add to pot. 3) Let the chicken sit in the pot for 30 minutes at room temperature. 4) Heat pot over medium heat, stirring liquid occassionally to even out hot spots. 5) Check the temperature of the chicken after 10-15 minutes. Remove after the temperature hits 160°. |
