Steaks with Mustard Sauce

Fantastic mustard sauce
 
ingredients: 1 steak
1 shallot, minced
2 Tbsp unsalted butter
2 Tbsp whole grain mustard
3/4 cup low sodium chicken broth
 
instructions: 1) Pat steaks dry with paper towels and salt and pepper. Heat oil in large skillet over medium-high heat until just smoking. Cook steaks until well browned, 3 to 5 minutes per side. Transfer to cutting board and tent with foil.

2) Melt butter in empty skillet. Add shallot and cook until soft, about 3 minutes. Stir in chicken broth and mustard, scraping up any browned bits. Simmer until slightly thickened, about 2 minutes.
