Tapioca Pudding

Simple tapioca recipe.
 
ingredients: 1/3 cup small tapioca
1 and 1/3 cup light coconut milk
1/4 teaspoon salt
1 egg yolk
1/3 cup sugar
1/4 teaspoon vanilla extract
 
instructions: 1) Soak tapioca for 2 hours in enough cold water to cover, drain

2) Combine tapioca and coconut milk and salt in a double boiler over simmering water, bring to a boil

3) In a small bowl whisk egg yolk and sugar just until blended. Add to tapioca mixture and continue cooking, stirring constantly, for 20 to 25 min or until thickened
