Tomato Soup
description:
A simple soup that'll go well with french bread. It tastes like tomato egg without the egg. This recipe serves 2.
 
ingredients: 2 Tbsp extra-virgin olive oil
2 Tbsp shallot, chopped
1 garlic clove, minced

1 14.5oz can diced tomatoes
1/2 cup chicken broth
1 slice hearty white sandwich bread, torn into 1-inch pieces
1 tsp packed brown sugar
 
instructions: 1) Heat oil in a sauce pan over medium-low heat.

2) Add shallot and garlic and cook, stirring occasionally until softened and lightly browned, about 3 minutes.

3) Carefully pour tomatoes and their juice into sauce pan.

4) Stir in broth, bread, and sugar. Increase heaat to medium-high and bring to boil. Reduce heat to medium and cook, stirring occasionally, until bread starts to fall apart, about 5 minutes.

5) Turn off heat and blend with an immersion blender.

6) Season with salt and pepper.
