A nice way to use the kombu used in dashi.
 
ingredients: used kombu from dashi
1/2 tsp sesame seeds

1 cup water
1 Tbsp sake
1 Tbsp mirin
1 tsp rice wine vinegar
2 Tbsp soy sauce
2 tsp sugar
1/2 tsp bonito flakes
1/4 tsp red pepper flakes
 
instructions: 1) Cut the used kombu into thin strips.

2) Place everything excpt the sesame seeds into a pan or pot and bring to a simmer.

3) Simmer for 20-25 minutes or until the liquid is almost evaporated.

4) Add sesame seeds and eat.
