Yokan
description:
A New Years red bean jello dessert.
 
ingredients: 200 g azuki beans
800 ml water
200 g sugar
pinch kosher salt

400 g of the red bean paste (above)
350 ml water
1 stick powdered kanten (4g)
pinch kosher salt
 
instructions: 1) Rinse the beans thoroughly under cold water.

2) Place the beans and 800 ml of water in an instant pot and cook under pressure for 30 minutes.

3) Let the cooker naturally release for 15 minutes.

4) Drain the beans and return to the instant pot. Cook on sautee with the sugar until combined.

5) Place the beans into a blender or food processor and blend well.

6) Pour the kanten into the water and bring to boil in a pot.

7) Continue whisking the water to dissolve the kanten.

8) Add the red bean paste and pinch of salt.

9) Pour into the rectangle pyrex, cool on the counter, and move to the fridge.
