Zucchini fries
description:
Tender zucchini stripes with a crispy exterier.
 
ingredients: 1 zucchini (8 oz), quartered lengthwise, keep the skins on

3/4 cup panko bread crumbs
2 Tbsp olive oil
1/2 cup parmesan cheese, grated

1 egg
1 Tbsp all-purpose flour
1/4 tsp garlic powder
1/8 tsp white pepper
1/8 tsp table salt

1/2 cup plain yogurt
1/2 tsp grated lemon zest, plus 1 Tbsp juice
 
instructions: 1) Cut the zucchini lengthwise, into quarters (strips). Cut out the seeds. Then cut the zucchini lengthwise again and then in half. You should have 16 strips.

2) Toss panko with oil in bowl until evenly coated. Microwave, stirring frequently, until light golden brown, 1 to 3 minutes.

3) Let panko cool down and then add parmesan cheese.

4) Whisk egg, flour, garlic powder, 1/4 tsp salt, and 1/8 tsp pepper in a bowl.

5) Coat zucchini with the egg/flour and then coat with panko mixture.

6) Spray air fryer base with oil. Arrange zucchini pieces in the bakset, spaced evenly, and then place another layer of zucchini on top, perpendicular.

7) Cook at 375° for 13 minutes.

8) Whisk yogurt, lemon zest, lemon juice, 1/4 tsp salt, and 1/8 tsp pepper in a small bowl.
