Furikake
description:
A simple rice topper that should be made after making the zaru soba sauce.
 
ingredients: 2 cups bonito flakes
1 Tbsp toasted sesame seeds
1 tsp sugar
2 tsp soy sauce
1/4 tsp kosher salt
nori
 
instructions: 1) Cut the nori into small pieces.

2) Separate the wet bonito flakes as much as possible and place in a sauce pan. Add sesame seeds.

3) Cook on medium heat until the bonito flakes are dry and separated from each other.

4) Add sugar, salt, and soy sauce.

5) Continue cooking until the liquid is evaporated. Mix frequently as the sugar will burn in the pan.

6) Add the nori and store.
