Zaru soba
description:
A cold soba dish with dipping rather than soup.
 
ingredients: 1/2 cup sake
1 cup mirin
1 cup soy sauce
2"x2" piece of konbu, rinsed
2 cups bonito flakes

Soba noodles
wasabi
 
instructions: 1) Bring sake to boil in a sauce pan.

2) Add soy sauce, mirin, konbu, and bonito flakes to pan. Bring to boil.

3) Reduce to a simmer for 5 minutes.

4) Remove from heat and let it cool completely.

5) Strain the sauce and keep bonito flakes and konbu for furikake.

6) Cook soba noodles for ~8-9 minutes -- do not salt the water. Save 2-3 cups of soba cooking water. Rinse soba noodles well.

7) Place 3 Tbsp of the soy mixture along with a small amount of warm cooking water for a dipping sauce. Optional: Add wasabi to the dipping sauce to an extra kick.

8) When done, add more soba cooking water to your dipping sauce and drink.
