Italian sausage

A very simple recipe for italian sausage that can be used in baked ziti, pizza, pizza rolls, ziti with sausage and peppers.
 
ingredients: 1/2 tablespoon fennel seeds, toasted

1/2 large garlic clove, minced to paste
3/4 tsp sugar
3/4 tsp salt
1/2 tsp pepper
1/8 tsp dried oregano
1/8 tsp red pepper flakes

1/2 pounds coarsely ground pork
 
instructions: 1) Toast the fennel seeds in a pan for 5 minutes until fragrant. Remove and let it cool for 5 minutes.

2) Smash the fennel seeds into small pieces with a ice cream scooper. This will help release its flavors in the sausage.

3) Mix all spices and garlic into the smashed fennel seeds.

4) Spread the pork in a wide bowl, pour the spice mixture on top, and mix together with your hands.

5) Cover and refrigerate the pork for several hours for the flavor to mix into the pork.

6) Pan fry the pork in a non-stick pan.
