Alkaline solution for ramen noodles. Ramen noodles need a basic solution to aid in creating a chewy noodle for ramen. It is extremely important to measure the baking soda using a scale.

ingredients:

60 g baking soda

instructions:

1) Line the toaster oven pan with a sheet of aluminum foil. Remember the weight of the foil for step #4.

2) Measure the baking soda using a digital scale.

3) Bake in the toaster oven at 300° for 30 minutes.

4) Remove the foil/baking soda and place on the scale. The weight should be 2/3rd's of the original weight. (40g)

5) Add the baking soda back to the oven if you're not at 40g.

6) Store in an air tight jar.
