Homemade ramen noodles. The proportions of the ingredients is very important. The amount of salt and kansui should be 1% of the flour. The water should be 40% of the weight of the flour. This recipe is good for one meal for the family (2 adults and 2 kids). |
| ingredients: | 300 g bread flour 120 g cold water 3 g kosher salt 3 g kansui |
| instructions: | 1) Measure out all of the ingredients using a digital scale. 2) Mix the kansui and salt into the water until dissolved. 3) Slowly mix in the water mixture into the flour. This process should take ~5 minutes. 4) Break up any large chunks of flour with your hands. 5) Form into a log and move into a ziplock bag. Let it rest for 30 minutes. 6) Step on the bag until the dough is flat. Let it rest for another 30 minutes. 7) Remove, add potato starch, and flatten using a roller. 8) Size up the dough so that it fits into the pasta machine. 9) Run the dough through the machine at the largest setting. 10) Move the setting to #1 and run through again. 11) Fold the dough on top of itself and run it through again at #0, open side first. 12) Keeping running the dough through the machine, lowering the setting by one each time. 13) Once the machine is set to #6, run it through the pasta cutter. 14) Dust with potato starch and store for at least a day in the fridge. 15) Cook noodles for 3 minutes. |
