Oroshi soba
description:
A cold, refreshing soba dish that goes well with tamagoyaki. This recipe serves two adults and two kids.
 
ingredients: 3 bunches of soba noodles
1/2 lb daikon, finely grated (with a microplane)
1/4 cup bonito flakes

Sauce
3 cups water
2 cups bonito flakes
2.5 Tbsp sugar
2 Tbsp mirin
6 Tbsp soy sauce
3/4 tsp kosher salt
 
instructions: 1) Bring water to boil. Turn off heat and add bonito flakes. Let it steep for 15 minutes.

2) Strain sauce, return back to the pot, add the rest of the sauce ingredients, bring to boil, and turn off. Cool down the soup as much as possible.

3) Boil the soba noodles for 8 minutes.

4) Drain and rinse noodles.

5) Divide the soup to the bowls and add the grated daikon amongst the bowls.

6) Divide noodles into the bowls.
