| ingredients: | 2 bunches of soba noodles Sauce: 3 Tbsp sugar 2 Tbsp rice wine vinegar 4 Tbsp soy sauce 1/2 tsp sesame oil 1/4 tsp sriracha Toppings: 1/2 block of firm tofu, cut into 1/2-inch cubes rolled egg furikake |
| instructions: | 1) Combine sauce ingredients in a big glass bowl. Place tofu into the sauce and coat well. Let it marinate in the sauce for 10 minutes and then remove. 2) Boil the soba noodles for ~8 minutes until soft. Do not salt the water. 3) Draink soba noodles, but do not rinse. Quickly add it to the bowl with the sauce and coat the noodles. 4) Serve warm with toppings. |
