Ziti with sausage ragu

Thick, flavorful red sauce with sausage.
 
ingredients: 1 Tbsp extra virgin olive oil
1 lb italian sausage

1/2 fennel blub, stalks discarded, blub cored and chopped fine
1/2 onion, chopped fine
Salt and pepper

2 Tbsp tomato paste
4 garlic cloves, minced
1 1/2 tsp dried oregano

3/4 cup dry red wine (or water)
3 1/2 cup water, plus extra as needed
1 28oz can crushed tomatoes

1 lb ziti
2 Tbsp shredded fresh basil
grated parmesan cheese
1/2 cup grated mozzarella
 
instructions: 1) Using medium saute or browning setting, heat oil in the large pot until shimmering, Add sausage and cook, breaking up meat with wooden spoon, until brown, 6 to 8 minutes. Remove the sausage, cool, and break into small pieces.

2) Add sausage back to the pan, stir in fennel, onion, and 1/2 teaspoon salt and cook until vegetables are softened, 3 to 5 minutes.

3) Stir in tomato paste, garlic, and oregano and cook until fragrant, about 30 seconds.

4) Sitr in wine (or water), scraping up any browned bits, and cook until nearly evaporated, about 1 minute. Stir in water, tomatoes, and dry pasta.

5) Cover with lid bring sauce to simmer and cook for 7-10 minutes.

6) When pasta is near done, season with sugar, salt, pepper, and simmer for another few minutes to thicken the sauce.
