Soba soup
description:
A traditional New Years meal that's served on the eve. This dish makes enough for our family of four in 2021.

This recipe may need more mirin/sake/soy/salt for more flavor.
 
ingredients: Option #1
4 cups water
2 Kayanoya dashi packets

Option #2
4 cups water
2 tsp hondashi

Option #3
4 cups water
1 piece kombu (8"x6")
1.5 cup bonito flakes (15g)

Seasoning
2 Tbsp mirin
1 Tbsp sake
2 Tbsp soy sauce
1 tsp kosher salt

3 bunches soba noodles
 
instructions: Option #1: Soup from Kayanoya dashi packets
1) Place Kayanoya dashi packets in the pot with cold or room temperature water.

2) Bring to boil. Reduce to medium and simmer for 2-3 minutes. Remove packets.


Options #2: Soup from scratch
1) Soak kombu in water overnight.

2) Transfer water/kombu to a pot and bring to boil. When it's almost boiling, remove kombu from water and set aside.

3) Add bonito flakes and simmer for 30 seconds. Turn off heat and let it steep for 10 minutes.

4) Strain out the bonito flakes and set aside for furikake.


Options #3: Soup from Hondashi
1) Bring water to boil.

2) Add hondashi.


Rest of the soup
1) Return the soup to the stove and bring back to a boil.

2) Add mirin, sake, soy sauce, and salt. Once it hits a boil, turn off the heat, and cover.

3) Toppings can include age, kamaboko, and/or rolled egg.
